Interested?
Ask the broker or the assistant for the price. Begin negotiation. Usually the asking price is per carat.
It is traditionally expected to make a grimace when the price is announced.
Not interested?
Let the broker gather the merchandise by himself and then take his leave. This is in order to avoid confusion especially if there are a lot of gems on the negotiation table.
